Discover Food Journal invites contributions for a special issue entitled "New Foods: Chemistry and Engineering".
This issue focuses on the chemical and engineering aspects involved in the development of new and functional foods, as well as innovative ingredients. With lifestyle changes driving consumer demand for healthier, affordable, and minimally processed foods, new challenges arise for both researchers and the food industry.
The special issue aims to collect scientific contributions that address emerging trends, challenges, and opportunities in the field of new food development.
Original research articles, review papers, and perspective pieces are welcome. Topics of interest include, but are not limited to:
Innovative food formulations and ingredient design
Novel food processing technologies and techniques
Advances in food chemistry and molecular interactions
Sustainable and green engineering solutions for food production
Food safety, quality assurance, and risk assessment
Functional foods, nutraceuticals, and health-promoting ingredients
Sensory evaluation, consumer perception, and acceptance of new foods
